I agree, but I now like to brine my own Beef Brisket for 8 days and cook my own Salt Beef from scratch, served in a lightly toasted Bagel with Polish Mustard and Pickled Gherkins. It’s a game changer.

You only keep that colour using Sodium Nitrite (Prague Powder), which I believe is not very healthy, but its so damn tasty. Enjoy the moment.
