    Baked Spud toppings..........?

    Anyone any ideas on baked potato toppings? Sick of the beans and cheese
    and tuna mayo. Need some inspiration.

    Help me..... :)

    Minted Pea and Mayo.........
    Pastrami and Mayo.........

    Oh and the classic - Feckin Hot Chilli, with or without Cheese

    A tin of curry or a tin of beef and ale stew used to do nicely when I worked nights and ate a fair few jackets, haven't had one for years now.

    Or the old N.A. classic - crispy bacon, sour cream and chives (make sure you butter the hot spud first)

    Nice blob of olive oil 'marge' then a few slices of ripe avocado topped with your fave grated cheese (for me this one's arf tidy! http://www.collierscheese.com/The-Range/ )

    Then back under the grill for 2 mins. Well tasty!

    Get hold of some smoked trout and mix it in a bowl with horseradish, add mayo to taste and Bobs your proverbial.

    Yes mate, it works.

    Otherwise, get a good potato, bake it in the oven (not microwave for christ's sake) until the skin is crispy, remove and plate it. Scoop out the fluffy contents, mash with copious amounts of butter and some boursin, refill the skins press tight and bake it again 'til the contents are all melty. Boosh.

    Whether you still cover it with curry is your move though... :shock:

    Large Spud, oven baked, cut open.
    Generous lashing of cayenne pepper butter. (melt butter in pan, add cayenne, decant to container, then cool till solid again. quantities to taste)
    2 x Fried Eggs, (or poached if you're a girl), on top.
    Salt & Pepper to taste.

    Food of Kings.

    spinach or asparagus and then a poached egg on top. or keep it simple with just olive oil and a quality soya sauce. maybe a couple of fresh sardines if youre feeling frisky :wink:

    Cottage cheese with onion & chives is nice.


    If you microwave a potato for 6 minutes, and then stick it in a hot oven for 15 minutes, it will be crispy outside, and fluffy inside.

    plonked on a crispy buttered spud! Proper BO!

    Alex have you tried soft herring roes fried in olive oil :wink: ... scald the roes first by pouring boiling water over them ... drain and fry in the oil and add some mixed spices for fish ie dill, onion, parsley, black pepper, ... serve with side salad and slices of lemon. The roes shrink a lot when cooked so buy a large tubful.

    Ive just had a spud as it goes...i intended to do the beans/cheese combo and we are out of cheese so i went for Pesto and Tuna...

    surprisingly tasty

    Parmesan, creme fraiche and diced pancetta

    Better still,

    1 - Take uncooked baking potato
    2 - Peel
    3 - Cut into chip sized pieces
    4 - Double deep fry in beef dripping
    5 - Serve with 12oz ribeye steak, onions, mushroom etc and bottle of New Zealand pinot noir

    I was thinking about weird combinations that surprisingly work like cottage cheese with pineaple.
    I haven't tried it but use your imagination, could chocolate work?

    Thats my method too, but I paint the skins with olive oil after the microwave bit and a little salt rub gets the skins extra crispy...

    Stag 'extra hot' chilli is a tasty quick topping.....

    Classic tuna and mayo.......... but finely chop some jalapenos (sliced, in a jar from a supermarket near you) in the mix and top with a bit of celery salt.
