You lot get around a bit so I'm seeking advice for a 2 night midweek gastro getaway please.
We prefer a laid back atmosphere with more of a pub feel than a restaurant feel if possible and preferably within 2-3 hours drive of north Cheshire.
Examples of places we've visited in the past and enjoyed include The Stagg Inn (Herefordshire), The Star at Harome (Yorkshire), The Punchbowl Inn (Lake District), etc.
Your recommendations would be welcome and appreciated. :-)

Not far from me. Just off the A1 near between Stamford and Grantham. DID have a Michelin star, don't think they have one any longer - it hasn't made any difference, still a nice place to eat. And they have good rooms to stay over.

The restaurant is smart - but good to contrast it with their other pubby place in same village. IIRC they might have another place locally too now. Also nice rooms.

there's a smart restaurant (have a star I think) and a more informal Bistro. But I've always found all of it relaxed. Good mix of rooms to choose from.

L'enclume is awsome, have been 4 times now.
They do a good value 2 night break including room, dinner at L'enclume one night and dinner at rogan & CO the other.
Added benefit of being on the edge of the lakes, pop to the drunken duck near coniston for lunch or the old stamp house in Ambleside
If you are ever near Essex or Cambridge the flitch of bacon in great dunmow and midsummer house in Cambridge are both splendid, flitch of bacon will be getting a star this year & Danny Gill will be a well known name very soon ;-)

I would definitely recommend L'enclume! The missus and I did the 2 night break with dinner at L'enclume first night, breakfast
and dinner at Rogan & Co the next day. Superb, Cartmel is a pretty little place, good pub, nice Abbey and you have the Lake District
on your doorstep.
The food was exceptional, and despite the cost (£595 when we went, £620 now - excluding wine) we would definitely revisit.

Had dinner here last year and have to say it was excellent. Not sure about how that would be part of a midweek break but I'm guessing pretty close to you, being just outside Chester.
Another recommendation for L'Enclume, brilliant food and the rooms are pretty decent too.
