You only keep that colour using Sodium Nitrite (Prague Powder), which I believe is not very healthy, but its so damn tasty. Enjoy the moment.
I do the same it’s a wonderful sandwich.

If you end up with any leftovers I can recommend making a hash with mash & white & green onions, make into small patties in English muffins with some hp sauce.
