Jake Gyllenhaal in nightcrawler!!
Eddie Marsan - this guy, if the name's unfamiliar:
Did anyone see The Big Kahuna with Kevin Spacey, Danny Devito and Peter Facinelli? All those actors were fantastic in that movie, that movie was all about having to be able to act.
Sir Iain McKellan,
Anthony Hopkins 90% of the time,
Don't like him but DiCaprio,
Al Pacino in Scarface,
Jim Carrey...
Much more TV but David Jason is one that comes to mind immediately - I never think of his other characters when he is playing Del Boy, Granville, Insp Frost etc.
Kevin Spacey, Pete Postlethwaite, Maggie Smith, Jim Broadbent, Bill Nighy, Stanley Tucci.......
I think British actors are on average better than others.
I'd agree with David Jason, but a few of those often seem to play one character to me (Jim Broadbent and Bill Nighy, for example)...
John Thaw could get a mention, Reagan AND Inspector Morse - Both coppers, but very different... Plus his character in "Goodnight Mister Tom", again a totally different character.

Staying on the TV theme, Vicky McClure is a gem of an actress.('This is England')
Films wise, you've got to admire Heath Ledgers' depiction of the Joker in Batman.
Gene Hackman
Kevin Spacey (always plays the same character but is brilliant at it)
Patrick Stewart
Jodie Foster
DeNiro
Tom Hanks
Ralph Fiennes
Ben Kingsley
Denzil Washington
Sydney Poitier
One I think not mentioned yet
Giovani Ribisi - Played a lot of supporting roles and was brilliant in Saving Private Ryan
Also,
Ray Liotta
Jack Nicholson
Robin Williams (RIP)
No sure about Ray Liotta, I sat through this once
http://www.imdb.com/title/tt0460780/
Ray Liotta playing a wizard wasn't his finest moment.
Would also add Bryan Cranston, superb in what he does
Haley Joel Osment was incredible in The Sixth Sense and A.I., but doesn't seem to have had any decent roles since then.
I think Jim Carrey shows is skill in a few films, take away the Ace Ventura zany stuff and watch him in The Truman Show and Number 13 he's brilliant.
In a similar vein, Ben Wishaws characters in Layer Cake vs Bond is incredible.
Special mention for Denzel just for Training Day.
Finally Bruno Ganz in Downfall is jaw dropping.

Just thought of another
Sean Penn - 21 Grams, Mystic River, I am Sam and Dead Man Walking. All worth a watch if you haven't seen them
I'd rather stick needles in my eyes than watch Sean Penn.
Not sure if he's been mentioned...
Liev Schreiber. Cracking actor.
Daniel Brühl is consistently good, in English and German; both he and Chris Hemsworth acted their Nomex socks off in 'Rush'.
Domininc Monaghan (Merry from Lord of the Rings) can play characters that I actively dislike, and that's always a sign of good acting ability.
Steven Seagal
Elisabeth taylor & richard burton
Jennifer Jason Leigh - Miami Blues, Single White Female, The Hateful 8
Emile Hirsch - The Girl Next Door, Alpha Dog, Into The Wild
Vincent D'Onofrio
Kevin Spacey
Anthony Hopkins
