    All purpose kitchen knife

    I know there are many knife guys in here, I'm wanting to step up a little bit from Robert Welch we've got , ne nit great as blade ruined by cheap sharpener but still ok

    Online tests etc seem to suggest Wusthoff 8" classic for 100 quid is a good bet for my budget, any others?

    I’ve had a set of Wusthof Classics for 20+ years for the main knives in the set inc that chefs knife. No complaints at all needs very little attention if you look after it. Same with any of them. I’d say that bigger blade holds an edge better than the small variants in my experience. That sort of knife shape is a great all rounder.

    +1 for Wusthoff Classic.

    I got a set for a gift and although all the knives are not essential, it's a set for life.

    I went down a bit of a rabbit hole with this.

    German tend to hold an edge better.

    Japanese tend to be sharper (but blunt quicker)

    I love semi autistic watch enthusiasts like myself. It doesn't take much to go down the rabbit hole for even the most mundane of items.

    It doesn't matter if there is an obvious answer, going down a rabbit hole is just so much fun.

    Wusthof +1. I’ve had one of their budget Silverpoints as my daily driver for years, bought it as backup to a premium Henckels when we had a 2nd abode due to work circumstances and actually prefer the lighter weight and moulded non-bolstered handle.

    My budding chef daughter prefers the Henckels so jobs a good un.

    Gone in, its mental , biggest issue is finding UK sellers and avoiding fakes on Amazon

    I think it is a blessing and a curse. I don't think I've ever bought anything without going down a rabbit hole. Experts in the mundane!

    The Horl 2 is a great buy. It's brought my Robert Welch knives back to a great sharpness

    Maybe do yours with it too as back ups?

    I´m not certain but might Gromdal be joking, on a bit of a leg pull??? after all if a knife has to be modded to be kind to the users hand surely there´s gotta be better, simpler options out there...just going on Forged In Fire rules...IF the weapon, blade hurts the user it´s a fail...

    or alternately grow some calluses with time and frequent use.

    Not a leg pull at all - have a look at the finish on the Tojiro vs the finish on the Kotetsu Bunka (the knife I upgraded to):

    Yes, it's twice the money, but that aside my wife's Robert Welch knives are much nicer to use than the out of the box Tojiro, if we take the steel types aside, and are half the price.

    Size is very user dependent. I had a 16cm IKEA knife to start with, then tried a 20cm Henckels before coming back to an 18.

    I wouldn't buy a set, nor do I usually buy knives with a bolster as those Wusthofs have (except the Santoku) as it stops you adequately sharpening to the heel of the blade. What do you use most in the kitchen? Spend accordingly. I use a bread knife maybe a few times a month if we've got a loaf in, so I have a well rated Mercer with 4.5 stars from nearly 50k ratings on Amazon at £13.66 that I believe was the top rated in America's Test Kitchen. Paring knives? I buy the cheap Victorinox sets and replace every few years as needed, they are always getting used and abused by the family for lunches/breakfasts/snacks so no reason to have good ones, and I can have multiples. I have a 15cm carbon steel Sabatier that gets stupid sharp if I need a more nimble knife for things like boning or removing silverskin, otherwise I literally use one knife for almost everything I do in the kitchen now.
